Cacahuates Enchilados

INGREDIENTS

2 cups raw peanuts
1 tablespoon vegetable oil
1 tablespoon (13 g) chile/lime seasoning
1 tablespoon (15 g) hot, smoked paprika

INSTRUCTIONS

  1. Preheat oven to 350°.
  2. Toss peanuts and vegetable oil together in a medium bowl until completely coated. Add chile/lime seasoning and paprika and continue tossing until peanuts are completely coated and red. Spread onto a rimmed baking sheet in an even layer.
  3. Bake, tossing once halfway through baking, until peanuts are brick red and very fragrant, 10-15 minutes.
  4. Let cool completely and serve.
